Double Chocolate Sweet Potato Brownies

  • ½ cup boiled sweet potato (mashed), skin removed
  • 2 eggs
  • ¼ cup grass-fed butter, melted (or coconut oil)
  • ½ teaspoon vanilla extract
  • ¾ cup blanched almond flour
  • ¼ cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • ½ cup coconut palm sugar
  • ¼ teaspoon stevia extract
  • ½ teaspoon sea salt
  • ½ teaspoon baking soda
  • ¼ cup chocolate chips, plus more for sprinkling over the top
  1. Preheat oven to 350°F and grease an 8x8-inch baking dish with coconut oil (or butter).
  2. Beat together ½ cup mashed sweet potato with eggs, butter and vanilla. You can do this in the blender or with a hand mixer. Set aside.
  3. In a large bowl, whisk together almond flour, coconut flour, cocoa powder, coconut palm sugar, stevia extract, sea salt, and baking soda until well combined.
  4. Add sweet potato mixture to flour mixture and stir until well incorporated. Stir in chocolate chips.
  5. Scoop batter into baking dish and use a spatula to smooth the top. Sprinkle chocolate chips over the top.
  6. Bake for until a toothpick inserted into the middle comes out clean, about 30 minutes.
  7. Cool and enjoy.
